Super Easy and Delicious Lentil Dish

I visited a Spanish family last year and before I left home for dinner, I found that they were cooking something interesting for dinner. The aroma was so appetizing and I asked what’s on the stove. So my friend showed me a pot of Lentils cooked with various vegetables and spices.

Lentils are not a common dish in the Asian family, but they are enjoyed all over the world in many types of recipes and are one of the best all-natural meat-substitute foods. Lentils are loved by vegetarians because they are high in protein, rich in fibre and high in nutrients.

For those who know me, I want something easy and fast, so I combined a few online resources and tada…my simple recipe for Lentils:

1 cup yellow lentils
1/2 yellow onion
1 red pepper
1/2 carrot
1 tomato
1 bay leaf
1/4 tsp cumin seeds
1 cloves crushed garlic (use the garlic press)
1 tsp paprika powder
50-100g red wine, 100-200g water
1. Cut everything into small cubes, except bay leaf and garlic.
2. Stir-fry onion till soft then add in carrots, peppers, tomatoes, lastly lentils and bay leaf. Add in red wine & water. Let it slow-cook for 30-40 minutes.
3. Add in crushed garlic, paprika and cumin seeds. Continue to cook for 5 minutes.
This recipe is good to serve 2-3 adults, either go with rice or just by itself 🙂
